
剁椒魚頭

食材:
魚頭一顆
蒜頭約15-20顆(不喜歡可減少)
生辣椒適量(喜辣的可多加)
不喜辣的可改加青蒜或不加
自製剁椒醬3-4大匙
蔥花或青蒜適量
香菜適量
薑片數片
調味料:
甘甜醬油或蠔油1大匙
米酒1大匙
糖1小匙
冷壓酪梨油適量(最後油潑用)
做法:
1.魚頭的底部、上方鋪上幾片薑片或蔥短皆可,蒜頭、辣椒切末,怕辣的不需另外加入新鮮辣椒。
2.熱鍋加油,將蒜末(辣椒末)放入爆香,加入剁椒醬拌炒及所有調味料拌炒至香味四溢,起鍋備用。
3.將炒好的步驟2.平鋪在步驟1.的魚頭上,放入蒸鍋或蒸爐水蒸,從蒸汽開始出來時放入,計時10-12分鐘(視魚頭的大小微調時間)。
4.魚肉蒸好後取出,灑上大量蔥花,起鍋加入約5-6大匙的油燒熱後,油潑淋在蔥花上方,激發香氣,最後再撒上大量香菜末即可!(不喜香菜可不加或用青蒜取代)
