4 – 5 pounds whole chicken cut into 8 pieces
Half cup mild hot sauce
I use Frank’s Red Hot for mine
2 and a quarter cups all purpose flour
Quarter cup cornstarch
2 an a half teaspoon seasoning salt
1 teaspoon ground black pepper
1 tablespoon poultry seasoning
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon cayenne pepper
4cups of peanut oil for frying
Combine 8 cups cold water
with salt and sugar
Stir until the salt and sugar dissolve
pour the brine into the bowl with the chicken
cover the bowl refrigerate overnight
drain the brine from the bowl, but do not rinse the chicken
then pour the hot sauce all over the chicken
combine the flour, cornstarch, and all of the seasonings pour the mixture into a bag,
then toss in the chicken & shake the bag, until the chicken is coated
take the chicken from the bag, let the chicken sit so the flour sticks
pour the oil into a large skillet, and let it heat 350 degrees
add in the chicken,
and fry until it’s golden brown
